11 + 2 c uncooked brown rice
12 + 2 medium sweet potato, diced
13 + 2 small zucchini, cut into 1/4-inch half moons
14 + 1 c halved grape tomatoes
15 + 2 bell peppers, diced
16 + 1 onion, cut into wedges
17 + 2 jalapenos, seeded and diced
18 + 6 garlic cloves, peeled and minced
24 + 1 tsp smoked paprika
25 + 1/2 tsp ground black pepper
26 + 30 oz can black beans, drained
27 + 15 oz can corn, drained
41 + Cook rice in rice maker.
42 + Mix veggies, oil, and spices.
43 + Spread veggies over two baking sheets and roast in oven.
44 + Roast 12 min and stir veggies.
45 + Roast another 10-20 min until veggies are slightly blackened in places.
46 + Remove veggies from oven to cool.
47 + Place avocado flesh and other dressing ingredinents in bowl and blend thoroughly with immersion blender.
48 + Layer cooked rice, beans, corn, veggies, and dressing in bowls and serve at room temperature or warm.
