+## Ingredients
+
++ 2 tsp olive oil
++ 1 tube polenta
++ 1 15-oz can white beans, drained and rinsed
++ 2 packed cups baby spinach leaves
++ 2 1/2 c pasta sauce, divided
++ 1 c shredded parmesan cheese

+## Directions
+
++ Heat oven to 400 F.
++ Slice polenta in about 3/4 inch thick coins, 7 slices per tube.
++ Heat a large skillet over medium heat with olive oil.
++ Cook polenta in oil until crispy, about 5 min each side.
++ In a medium-sized, oven-safe pan mix together white beans, spinach, and 1 1/2 c pasta sauce.
++ Place polenta coins in bean mix, and then top polenta with remaining pasta sauce and the cheese.
++ Bake polenta in oven until heated through and cheese is melted, about 20 min.
