++ 1 c mashed banana, (about 2 1/2 - 3 bananas)
++ 1/4 c granulated white sugar
++ 2 tbsp whole milk
++ 1 tsp vanilla extract
++ 4 tbsp butter, melted
++ 1 1/2 c all-purpose flour
++ 3 tbsp unsweetened cocoa powder
++ 1/2 tsp instant espresso powder
++ 1 tsp baking soda
++ 1 tsp baking powder
++ 1/2 tsp salt
++ 3/4 c semi-sweet chocolate chips

++ Pre-heat oven to 375 F.
++ Coat a 12-count standard-sized muffin tin with cooking spray and set aside.
++ In a large mixing bowl, add the egg, mashed banana, sugar, milk, and vanilla extract.
++ Stir together until well combined.
++ Add the melted butter and stir together.
++ In a separate mixing bowl, add the flour, cocoa powder, espresso powder, baking soda, baking powder, salt, and chocolate chips.
++ Whisk until combined.
++ Add the dry ingredients to the wet ingredients and stir together until just combined.
++ Spoon the batter evenly among the wells in the prepared muffin tin.
