+## Ingredients
+
++ 1/4 c olive oil
++ [[Pizza Dough]] recipe
++ 1 lb mild Italian sausage
++ 2 15-oz cans black olives, sliced
++ 2 4-oz cans sliced mushrooms
++ 8-oz jar sun-dried tomatoes packed in oil
++ 2 green bell peppers, diced
++ 2 lb shredded mozzarella cheese
++ 32-oz jar marinara sauce
++ 1/2 c grated Parmesan cheese

+## Directions
+
++ Heat oven to 460 F.
++ Divide olive oil among two 12-inch cast iron skillets.
++ Swirl skillets so that oil coats bottom of the skillet.
++ Divide prepared pizza dough in two portions.
++ Role out each portion of dough on a lightly floured surface, until about 14-inches in diameter.
++ Transfer dough to oiled skillets.
++ Cook sausage in a small skillet until done, breaking up meat into small pieces with spatula or ricer.
++ Mix cooked sausage, olives, mushrooms, tomatoes, and peppers together in a medium bowl.
++ Divide mixture among the two skillets of dough.
++ Divide mozzarella among the two skillets.
++ Cook skillets on separate racks in the oven for 12 min.
++ Switch skillet positions and cook a further 8 min.
++ Remove pizzas from oven and top with equal portions on marinara sauce and then Parmesan.
++ Return pizzas to oven and cook further 8 min.
++ Remove pizzas from oven and let rest 5 minutes in pan.
++ Move pizzas to cutting boards and let rest 10 min.
++ Cut into pieces and serve warm.

+This recipe is easily adapted to make vegetarian deep dish pizza by omitting the sausage,
+or make vegetarian Hawaiian pizza by exchanging the sausage, mushrooms, tomatoes, and peppers with 2 20-oz cans of sliced pineapple.
