+A lentil recipe which goes well with [[Fake Injera]].
+Adapted from Sunset Magazine (March 2006).

+## Ingredients
+
++ 2 tbsp butter
++ 3 cloves garlic, minced
++ 2 c yellow or brown lentils
++ 4 c chicken (or vegetable) broth
++ 1 tbsp minced fresh ginger
++ Grated zest from 1 lemon (yellow part only)
++ 0.25 c lemon juice
++ Salt and pepper to taste
++ Cilantro and lemon wedges (optional)

+## Directions

++ Melt butter in sauce pan over medium heat
++ Add garlic and stir until beginning to brown, about 1 minute
++ Add lentils and stir to coat, then add broth. Simmer while covered
+ until lentils are tender (but not mushy), 20-30 minutes.
++ Stir in ginger, lemon peel, juice, and salt and pepper to taste.
++ Serve with chopped cilantro and lemon wedges on the side
