+## Ingredients

++ 3 15-oz cans beans
++ 1 medium onion, chopped
++ 2 c frozen vegetables, such as peas, green beans, and corn
++ 2 10-oz cans cream of mushroom soup
++ 5 c mashed potatoes
++ 1 c grated cheddar cheese

+## Directions

++ Preheat oven to 350 F.
++ Mix beans, onion, vegetables, and soup in a large casserole dish.
++ Top with mashed potatoes and then cheese.
++ Bake about 15 minutes, until cheese is melted and dish is warmed through.

++ Mashed potatoes can be made from about 10 small potatoes with butter and milk, but to make this recipe easier we like to use instant boxed mashed potatoes and prepare according to the box directions.
++ The recipe is good for camping. It can be cooked in a large dutch oven pot by placing 10 coals under the pot and 14 coals on the lid.
