+## Ingredients

++ 1 white onion
++ 2 cloves garlic
++ 2 medium carrots
++ 2 medium potatoes
++ 2 sticks celery
++ 1 red bell pepper
++ 30 mL olive oil
++ 1 tsp paprika
++ 1 tsp smoked paprika
++ 2 tbsp tomato paste
++ 200 g black beluga lentils
++ 1 L stock
++ 1 tsp salt
++ 1/2 tsp ground black pepper
++ 75 g plain Greek yogurt

+## Directions

++ Peel and dice the onion.
++ Wash, top, and chop the carrots, potatoes, celery, and pepper.
++ Warm olive oil in a large pot on medium heat.
++ Add the prepared vegetables to the pot and cook until starting to soften.
++ Peel and dice the garlic.
++ Add the garlic, paprika, and smoked paprika to the pot and cook for 1-2 minutes.
++ Add the tomato paste, stir well, and cook for another minute.
++ Add the lentils and the stock, bring to the boil, and then turn the heat down and let it simmer for about 25-30 minutes, until the lentils are tender and the stew is thickened.
++ Season with salt and pepper.
++ Serve stew hot and top with yogurt.
