[[!meta title="Wild Rice Vegetable Soup"]] Adapted from KristinesKitchenBlog.com 1700 cal/recipe ## Ingredients + 1 med onion, chopped + 4 ribs celery, chopped + 1 tsp olive oil + 1 cup wild rice + 1 med butternut squash or sweet potato, diced + 1/2 tsp dried oregano + 1/2 tsp dried thyme + 1/2 tsp garlic powder + 1/2 tsp salt + 1/8 tsp black pepper + 1 bay leaf + 6 c vegetable broth + 15-oz can cannellini beans, drained + 6 c destemmed and chopped kale ## Directions + Saute onion and celery in olive oil over medium heat. + Add remaining ingredients, except beans and kale. + Bring to a boil, and then simmer until rice is cooked (about 45 min). + Stir in beans and kale. + Serve warm.
