[[!meta title="Pressure Cooker Lentil Soup"]] Adapted from Beth Hornback at PassThePlants.com 4025 cal/recipe ## Ingredients + 2 med onion, chopped + 1 tbsp olive oil + 8 cloves garlic, minced + 4 tsp ground cumin + 2 tsp ground coriander + 3 tsp smoked paprika + 3 tsp salt + 2 tsp ground black pepper + 4 carrots, sliced + 4 celery stalks, sliced + 2 lb Yukon Gold potatoes + 2 c red lentils + 2 c brown or green lentils + 9 c water + 2 bunch rainbow chard, sliced ## Directions + Saute onions and oil in pressure cooker until translucent. + Add garlic, spices, carrots, celery, potatoes, and chard stems and saute until edges start to brown. + Add lentils and water and seal pressure cooker. + Bring to high pressure and cook for 3 min. + Quick-release pressure, stir in chard leaves, and serve.
