[[!meta title="Earl Grey Cupcakes with Lemon Buttercream Frosting"]] Adapted from InTheKnow.com 4200 cal/recipe ## Ingredients ### Cupcakes + 1 1/2 c all-purpose flour + 5 tsp Earl Grey tea leaves + 1 1/2 tsp baking powder + 1/4 tsp salt + 1/2 c unsalted butter, at room temperature + 1 c granulated sugar + 1 large egg + 1 tsp vanilla extract + 1 c milk ### Frosting + 1/2 c unsalted butter, at room temperature + 2 c powdered sugar + 2 tbsp heavy cream + 1 large lemon, zested and juiced ## Directions + Heat oven to 350 F. + Line cupcake pans with about 14 cupcake liners. + Make cupcakes by stirring together flour, tea leaves, baking powder, and salt in a small bowl. + Cream 1/2 c butter and granulated sugar in a large bowl until light and fluffy. + Beat egg and vanilla into butter mixture. + Slowly mix flour mixture into butter mixture. + Mix milk into batter. + Pour batter into cupcake liners, filling each about 2/3 full. + Bake cupcakes for 15-20 min until lightly golden. + Make frosting by beating 1/2 c butter and powdered sugar until smooth. + Mix in heavy cream, lemon zest, and lemon juice. + Spread frosting on cooled cupcakes. ## Note It's best to cut open tea bags for the tea leaves since bagged tea is basically ground and mixes into the batter well.
