[[!meta title="Corn, Jalapeno, and Brie Frittata"]] Adapted from Joanne Eats Well with Others 1700 cal/recipe ## Ingredients + 2 tbsp olive oil + 4 cloves garlic, minced + 2 jalapenos, seeded and minced + 1 1/2 c frozen corn, defrosted + 1 bunch basil, chopped + 6 large eggs + 1 c milk + 1 1/4 tsp salt + 1/2 tsp black pepper + 8 oz brie, cut into 1/4 inch slices ## Directions + Heat oven to 375 F. + Heat olive oil over medium-high heat in a medium skillet. + Saute garlic and jalapenos in oil for 1-2 min until fragrant. + Stir in the corn, basil, salt, and pepper and saute for 2-3 min until just tender. + In a large bowl, whisk together eggs and milk. + Grease a 9-inch square casserole dish. + Spread corn mixture in bottom of pan. + Distribute cheese across top of corn mixture. + Pout egg mixture across top of cheese. + Bake for 35-45 min until middle is just set. + Let rest for 10 min before serving.
