3 A lentil recipe which goes well with [[Fake Injera]] at a 3:1
6 Adapted from Sunset Magazine (March 2006).
13 + 3 cloves garlic, minced
14 + 2 c yellow or brown lentils
15 + 4 c chicken (or vegetable) broth
16 + 1 tbsp minced fresh ginger
17 + Grated zest from 1 lemon (yellow part only)
19 + Salt and pepper to taste
20 + Cilantro and lemon wedges (optional)
24 + Melt butter in sauce pan over medium heat
25 + Add garlic and stir until beginning to brown, about 1 minute
26 + Add lentils and stir to coat, then add broth. Simmer while covered
27 until lentils are tender (but not mushy), 20-30 minutes.
28 + Stir in ginger, lemon peel, juice, and salt and pepper to taste.
29 + Serve with chopped cilantro and lemon wedges on the side
