9 + 1 lb whole wheat penne
10 + 12 oz spicy Italian sausage, casings removed
12 + 20 oz mushrooms, sliced
13 + 5 oz fresh baby kale or baby arugula
15 + 1/2 tsp ground black pepper
16 + 1/3 c shredded Parmesan cheese
20 + Heat large covered pot of salted water to boiling.
21 + Cook pasta until al dente.
22 + Drain pasta water while reserving 1/4 c.
23 + Heat large skillet on med-high and add sausage.
24 + Break up sausage while cooking.
25 + When half-way cooked, add onion.
26 + When onion starts to brown, add mushrooms.
27 + Cook with stirring until mushrooms are softened.
28 + In large pot of drained pasta and reserved pasta water, add sausage mix, kale, salt, and pepper.
29 + Stir on med-low heat until well-mixed.
30 + Serve and top with Parmesan.
