11 + 1 15-oz can white beans, drained and rinsed
12 + 2 packed cups baby spinach leaves
13 + 2 1/2 c pasta sauce, divided
14 + 1 c shredded parmesan cheese
19 + Slice polenta in about 3/4 inch thick coins, 7 slices per tube.
20 + Heat a large skillet over medium heat with olive oil.
21 + Cook polenta in oil until crispy, about 5 min each side.
22 + In a medium-sized, oven-safe pan mix together white beans, spinach, and 1 1/2 c pasta sauce.
23 + Place polenta coins in bean mix, and then top polenta with remaining pasta sauce and the cheese.
24 + Bake polenta in oven until heated through and cheese is melted, about 20 min.
