10 + 3 stalks celery, chopped
12 + 1 large onion, diced
16 + 6 garlic cloves, minced
18 + 1 tsp ground black pepper
19 + 1 shy tbsp chili powder
20 + 2 quarts vegetable broth
21 + 6 15-oz cans of beans
22 + 2 15-oz cans of roasted diced tomatoes
24 + 6 oz jack cheese, shredded
29 + Saute oil, peppers, celery, carrots, and onion in large pot until softened.
30 + Add bay, thyme, salt, garlic, cumin, black pepper, and chili powder and saute until fragrant.
31 + Add vegetable broth and bring to boil.
32 + Reduce to simmer and add beans and tomatoes.
33 + Cook until warmed through.
34 + Serve soup topped with tortilla chips, cheese, and cilantro.
