11 + 1/2 c unsalted butter
12 + 1/4 c white granulated sugar
15 + 1 3/4 c graham cracker crumbs
16 + 1 c unsweetened shredded coconut
21 + 3 tbsp unsalted butter
22 + 1 1/2 tbsp heavy cream
23 + 1 tbsp custard powder (see Note)
24 + 1 c confectioners sugar
28 + 1 c dark chocolate chips
33 + Line a 8 inch by 8 inch dish with parchment paper.
37 + Melt first 3 ingredients in double-boiler.
39 + Cook until slightly thickened.
41 + Stir in crumbs, coconut, and nuts.
42 + Press firmly into prepared dish.
43 + Place in freezer while preparing next step.
47 + Cream all ingredients together.
48 + Beat until light and fluffy.
49 + Spread evenly over crust.
50 + Place in freezer while preparing next step.
54 + Melt all ingredients together in double-boiler.
55 + Allow to cool slightly.
56 + Spread evenly over creamy middle.
58 + Cool for 1 hour in freezer or 4 hours in refrigerator before slicing.
63 + Custard powder is difficult to find in United States. Vanilla pudding mix (unprepared) can be substituted at 1:1.
