10 + 1 yellow onion, diced
11 + 4 large carrots, diced
12 + 1 bunch of celery, diced
13 + 4 cloves garlic, minced
14 + 2 1/2 tsp fresh or ground ginger
15 + 2 c dry lentils, rinsed
16 + 1 c dry quinoa, rinsed
18 + 1/2 heaping tsp ground coriander
20 + 1/2 heaping tsp ground black pepper
21 + 10 c vegetable broth
25 + Heat a large pot over medium heat. Add oil, onion, carrot, and celery.
26 + Cook until softened.
27 + Add garlic and ginger.
28 + Cook for several minutes.
29 + Add all remaining ingredients and stir until combined.
30 + Cover with a lid and simmer until lentils and quinoa are cooked (30-40 min).
