5 Cornbread adapted from Better Homes and Gardens
14 + 1 med onion, chopped
15 + 3 cloves garlic, chopped
16 + 2 chipotles in adobe sauce, chopped
18 + 1 cup light-bodied beer
19 + 2 cups vegetable broth
20 + 1 28-oz can crushed tomatoes
21 + 1 15-oz can kidney beans, drained
22 + 1 15-oz can black beans, drained
23 + 1 15-oz can white beans, drained
30 + 2 1/2 tsp baking powder
35 + 1 1/2 c (6 oz) shredded pepper jack cheese
40 + Saute onions in olive oil over medium heat in a stock pot until edges are translucent.
41 + Add garlic, chili powder, chipotles, and salt.
43 + Add beer and stir to release food stuck to bottom.
44 + Add stock, tomatoes, and beans.
45 + Bring to a light boil and simmer for 10 minutes.
47 + Mix flour, cornmeal, sugar, baking powder, and salt in a medium bowl.
48 + Beat eggs in a medium bowl, and then mix in milk and butter.
49 + Mix dry ingredients, wet ingredients, and cheese.
50 + Spray 9-inch by 9-inch baking dish with oil.
51 + Pour batter into dish.
52 + Cook 15 minutes or until done.
