3 A lentil recipe which goes well with [[Fake Injera]].
4 Adapted from Sunset Magazine (March 2006).
11 + 3 cloves garlic, minced
12 + 2 c yellow or brown lentils
13 + 4 c chicken (or vegetable) broth
14 + 1 tbsp minced fresh ginger
15 + Grated zest from 1 lemon (yellow part only)
17 + Salt and pepper to taste
18 + Cilantro and lemon wedges (optional)
22 + Melt butter in sauce pan over medium heat
23 + Add garlic and stir until beginning to brown, about 1 minute
24 + Add lentils and stir to coat, then add broth. Simmer while covered
25 until lentils are tender (but not mushy), 20-30 minutes.
26 + Stir in ginger, lemon peel, juice, and salt and pepper to taste.
27 + Serve with chopped cilantro and lemon wedges on the side
